Today is a very unique St. Patrick’s Day because is in a leap year and that means extra good luck (according to Irish traditions). You can still enjoy the succulent classic corned beef and cabbage dish even if you’re on a diet. The perk is that since you’re making it, you can control how much fat goes into it. Hint: cook it in a crockpot or slow cooker to allow the corned beef to sweat and eliminate more fat. Make sure to purchase a low-sodium, reduced fat, non-smoked variety for a leaner alternative.
